Introduction & Banana Chocolate Chip Muffins!

Hello! I just wanted to give a quick introduction of myself before I did my first post, so I decided to combine it and make it short and sweet - just like the muffins.

My name is Jennifer and I am a self proclaimed DIY-er, with a love for baking and cooking delicious meals for my small little family consisting of Mister P and Baby P (Who is currently baking in the oven until September). I have a serious love for interior design and home decor, and vamping up our own little basement suite with easy yet gorgeous and fun DIY projects!

Banana Chocolate Chip Muffins
My mom has been making these muffins since I can remember. They're incredibly moist, well flavored, and not heavy on the belly. I've changed some things up over the last little while or so, making my own version of her recipe.
Banana Chocolate Chip Muffins
Yields 6 Large (Costco Sized) Muffins. Preheat oven to 350F.

Ingredients
  • 3 Medium/large bananas, overripe
  • 1 Egg
  • 1/3 Cup milk
  • 1 TSP vanilla extract
  • 1/2 Cup sugar
  • 1/2 Cup brown sugar
  • 1 1/2 Cup flour
  • 1 TSP baking soda
  • Pinch of salt
  • 1/2 Chocolate chips
Directions
  1. Mush your bananas using a fork or the mixer.
  2. Add the egg, milk, vanilla extract and sugars to banana mixture. Beat until well mixed.
  3. In a separate bowl, combine the flour, baking soda, and salt.
  4. Add flour mixture to banana mixture and mix for 2 minutes on medium speed.
  5. Add in chocolate chips, or fold in with a spatula.
  6. Fill muffin cups about 3/4 of the way.
Bake muffins for 30 minutes!
I usually only put them in for about 25 as they will continue cooking for a while after they have been removed from the oven.
